We do a lot of forest service dirt roads and I only need class 2. Will this provide the best ground clearance or will another class 3 be better? How much will bestinch reduce my clearance?

I have a solution for you, but the class of the hitch does not necessarily effect the clearance and has more to do with the weight range of the trailer it can tow. If clearance is the main concern, I recommend using the Curt Trailer Hitch Receiver - Custom Fit - Class III - 2" # C13234 since it provides the best clearance with 13" from the top of the receiver to the ground. Additionally, Curt hitches typically have the most durable powder coatings that will translate to a more durable hitch over time, so it's perfect for travel over forest service roads. This hitch has a 2" receiver, so it's ideal for both towing and carrying accessories mounted in the hitch receiver.
I don't typically recommend using a 1-1/4" receiver for towing, which the Class II Curt # C12140 has, since finding appropriate towing components to work with 1-1/4" receivers is problematic in most cases; when there is a 2" receiver available I do recommend going with that. Additionally, a hitch with a 1-1/4" receiver would only give you an extra 3/4" (roughly) of ground clearance and the benefits of having a stronger towing solution in my opinion greatly outweigh that 3/4".
If you also need a wiring harness, ball mount and hitch ball to complete your towing package, I've gone ahead and listed my recommendations for those below so you can easily find those.
