I have a 2 5/16 ball on my 8K utility trailer. Im in search of a Coupler Latch Lock, 9/32 diameter x 2 1/2 - 3inch long.

The etrailer Surge Brake Coupler Lock part # e98887 is perfect for your needs. It has a 2-1/2" useable span and is 1/4" in diameter. This is the size they use for these. I understand it is 1/32" smaller that your request but it is designed for your purpose.
