Question:
the hitch receiver which I have yet to install will be lower than the number on my 2015 crosstrek. I am worried that the dk2 will make my motorbike yamaha wr250r ride too low and risk bottoming out. Thoughts? Also, someone told me if I get a class 3 hitch receiver the tongue weight will be 500 lbs, but the internet says my tongue weight is 200 lbs, meaning I wont be able to use a hitch mounted motorbike carrier. Thoughts?

I do have thoughts, but start with the trailer hitch receiver fits for your 2015 Subaru Crosstrek if you don't have one yet, for which the best option is the etrailer Trailer Hitch Receiver # e98838.
This hitch is very similar, with the same installation and clearances as the other hitches that fit your '15 Crosstrek, the Draw-Tite # 76084 and Curt # C13135, but with a matte black finish that will help hide any scratches to help maintain a clean aesthetic.
As for the tongue weight, you do have to go by the lowest-rated capacity, and when I took a look in the online owner's manual of your 2015 Crosstrek, it said the maximum tongue weight was 200 lbs, as you said. You'll need to abide by that as opposed to the 525 lb tongue weight rating of the hitch, so a hitch-mounted carrier won't be an option, and you will need to use a trailer.
To do that you'll need trailer wiring, the Curt T-Connector Vehicle Wiring Harness # C56243 if your Crosstrek is a Hybrid model, or if your Crosstrek is NOT a hybrid, you will need the Curt T-Connector Vehicle Wiring Harness # C56040.
I have added links below to video installs of the hitch and wiring for you to check out.
