I want to install a hitch to carry a Thule 2-bike hitch rack, but I don't want my hitch to scrape on hills. Between the EcoHitch 306-X7310 and Curt C11412, which trailer hitch will give me the most ground clearance?

Both the EcoHitch # 306-X7310 and the Curt # C11412 are great options for a trailer hitch for your 2016 Volkswagen Golf GTI. The EcoHitch features 13 inches of ground clearance measured from the bottom of the receiver to the ground. I don't have an exact measurement for the Curt hitch, but the Curt seems to sit a bit lower from the frame.
Unless you plan on using this hitch with 1-1/4 hitch accessories exclusively, I recommend going with the EcoHitch # 306-X7309 instead as a 2-inch receiver is more versatile and will have about the same clearance as the 1-1/4 inch version.
