Can I use this Malone carrier with lift assist and fit 3 kayaks? Im unsure how I would load the middle one and if it needs a different cradle.

The only real option to carry three kayaks on the roof of a vehicle assuming space permits would be with a post style carrier, the Yakima BigStack Roof Mounted Kayak Carrier System part # Y04041 which would require the Yakima Cinch Straps part # Y05006 for more than two kayaks. There would not be enough space for three j-style carriers.
Unfortunately, there really wouldn't be any load assist options for this many kayaks, especially if you have a factory roof rack.
