Will this work with 2005 Dodge Ram 2500 Crew Cab Long Box 8? I am also wondering, if my 5th wheel trailer says the pin weight is 6,200 pounds I would need this 7,500 pound rated set vs the 5,000 pound set? Or am I okay with the 5,000 set just it would leave 1,000 pounds on my suspension?

We have a Firestone Ride Rite Red Label air bag kit that fits your 2005 Dodge Ram 2500 with the part # F2701 which has the capacity of up to 7,500 lbs of additional support. For as much pin weight as you mentioned having this would be the kit to use since it has the highest support capacity.
For a compressor kit then the heavy duty part # F96VV will work great to make inflating the bags and maintaining them easier. The compressor will inflate faster than standard compressors and the gauge inside the vehicle will allow you to monitor and inflate them from inside the vehicle.
