How Does Thule Rack for a 2019 Kia Sorento With Roof Rails Attach to Roof

My 2019 Kia Sorento has no rack system in place. There are channels on both sides of the roof with a plastic running the length of the channel. Does Thule make a fitting for the tower that fits the channel or does it use a metal strap system inside the top of the roof where the door closes?

Thule does offer a roof rack system for your vehicle using the WingBar Evo # TH711200 crossbars you'd looked at. The system attaches to the vehicle using the the roof rails you mention. This system would be assembled using the following:
# Thule TH711200 Crossbars
# Thule TH710601 Flush Rail Feet
# Thule TH186033 vehicle specific fit kit
If the roof of your Sorento did NOT have those rails, you'd need a rack that uses a fit kit that clamps to the upper door jambs.
