How thin will this compress when the door shuts? Thanks

The uncompressed height of the D-Shaped Rubber Seal # 362WS1463-25 that you referenced is 3/8 of an inch. With enough pressure it could be compressed almost totally flat but in reality you'd most likely end up compressing it to about half of it's height at most for nearly all applications.
