For an over-the-bed gooseneck hitch for your 2007 Ford F-350 cab and chassis flat bed the simplest to install is with the Buyers Products 42" x 13-1/2" Gooseneck Hitch Plate, part # 3373014981. The gooseneck plate will just be placed on top of the flat bed over the rear axle and you would need to drill into it, through the bed, and onto the frame members for support. You'll want to make sure that the center of the ball is over the rear axle, or slightly forward of it by about 1".

You will want to use at least six 1/2" Grade 5 bolts to secure the plate. This will provide you with 25,000 pound rated gooseneck hitch setup and because of its flat plate design you won't need to make any cutouts into the bed. I have attached a short video review that you can check out as well.
