explain what this panel actually does. will it run a camper for a day or does it just power the batteries.

A solar panel such as the Go Power Overlander Solar Charging System part # 34282181 does not directly power any of the accessories on your trailer. Instead, it will be used to charge the battery bank which will then be used to power the accessories on your trailer. That said, it can be rather difficult to estimate how much solar you need as there are just too many variables involved such as what your actual power requirements are and the amount of direct sunlight your panels will receive. That said, I can pretty confidently say the above would not power your entire trailer as you would need several more. I have attached a help article for you on using solar power which I am sure you will find helpful.
In summary, solar panels are a great addition to your trailer to help generate additional power but they should not really be used as the sole provider for this as it is just not a very effective means of doing so. If you are boondocking then you will need some sort of generator setup like the Champion Dual Fuel Inverter Generators w/ Parallel Kit - 7,000 Running Watts # CH49FR.
