We do have hitches that fit your 2015 Subaru XV Crosstrek Hybrid which will allow you to use an e-bike rack like the Thule EasyFold XT part # TH903202 that you referenced which is also your best option.
The EasyFold is a really great option for E-bikes as it has more than enough weight capacity for the heavier bikes, has a ramp to make loading/unloading easy, and has frame clamps that can fit basically all frame styles.
For a hitch we have the etrailer.com hitch part # E98838 which is a really great option with plenty of weight capacity and installs really easily.
