I have a 2017 Mercedes Benz E300 and want to tow a small PWC trailer, what hitch should I get?

For your 2017 Mercedes Benz E300 the Curt trailer hitch part # C11454 is a confirmed fit and has a 2,000 lb capacity so it would be what you'd need to start with. For trailer wiring you'd then want the ZCI kit part # 119250KIT which fits your vehicle and does not require any splicing.
For a ball mount you'd then want the Curt part # C45521. For hitch balls you'd want part # A-82 for a 2 inch ball and part # A-80 for a 1-7/8 inch ball.
