Will this fit a long bed with overlaod springs? If not which one will?

The Curt E16 5th Wheel Trailer Hitch with Install Rails part # C16116 will fit your 2004 Dodge Ram 3500 long bed with the overload springs. However, this kit comes with universal frame brackets which you will need to drill to install.
Instead, I recommend using the Curt E16 5th Wheel Trailer Hitch part # C16115 with the Curt Custom Fifth Wheel Installation Kit part # C16420-204 as this has frame brackets that are a custom fit so no drilling into the frame is required.
