I believe you are correct, the Derale Transmission Pan Cooler, # D14204, is designed for GM vehicles with 700R4 and 4L60E transmissions from 1982 to 1999 and we do not list an transmission cooler pan for the 2000 GMC Sierra 1500 with 4L60 M-30 transmission. I believe the issue you will run into is that the exhaust on the vehicle, or other parts, will interfere with installation of the pan to the transmission. The pan will fit the transmission if there are no parts on the vehicle in the way when installing the pan.
Your best option would be to go with the most efficient and largest standard transmission cooler available that will fit in front of the radiator and air conditioning condenser on your 2000 GMC pickup. The Derale Series 8000 Plate-Fin Transmission Cooler Kit, # D13504, would be my recommendation, if space permits. We have a video detailing the installation of a transmission cooler for you to review, see link.
You will also need a set of GM Radiator Adapter Fittings, # D13018, to complete the installation of this cooler on your truck.
