Id like to know what the resulting ground clearance would be from the bottom of the 2inch hitch installed on my 2005 outback wagon.

The Draw-Tite Max-Frame Trailer Hitch Receiver - Custom Fit - Class III - 2" # 75560 is a confirmed fit for your 2005 Outback wagon. It will have a ground clearance of 10 inches from the bottom of the lip on the receiver tube.
If you will be towing with this hitch receiver, I recommend the Tekonsha T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118461. This installs to factory wiring inside the cargo area behind the trim on the driver's side. I've attached a video to assist.
For a ball mount, I recommend the B&W Tow & Stow 2-Ball Mount # BWTS10035B. This will give you a 2 inch and 1-7/8 inch hitch ball as well as give you adjustability to tow a trailer level by offering the 1 inch height adjustments between a 3 inch drop and 3-1/2 inch rise. This ball mount also offers the ability to hide the ball on the backside when not in use to give you a clean look and save your shins when loading cargo in the rear hatch. You may also want to consider a hitch lock like # BX8858 to protect your investment.
