The folding J-style carriers simply fold down flat as you referenced. This gives you less noise due to wind resistance than the non-folding J-style carriers when not in use and also allows you to load multiple kayaks easier simply due to more maneuverability. There are a few that allow a vertical position as well as the angled position for multiple kayaks on one carrier.

I recommend the Yakima JayLow Kayak Carrier w/ Tie-Downs - J-Style - Folding - Side Loading # Y04073 due to the function and price point. This carrier will allow you to carry two kayaks and is lockable using the Yakima Same Key System (SKS) Lock Cores (QTY 2) # Y07202. The folding function makes loading 2 kayaks much easier.
