What is the difference between Curt C56063 and Curt C56343 ??

Essentially the two wiring harnesses you mentioned are the same but with different converter boxes. The part # C56343 comes with a newer converter box that has a higher amperage rating so it would be much less likely to short out whereas the # C56063 uses Curt's older box that in our experience is pretty easy to short out.
For that reason I would recommend the part # C56343 for your 2014 Ford Flex.
