Your 1997 GMC K2500 has the pickup frame spacing so Curt trailer hitch # C14081 will fit. The cab and chassis models (the ones that put service beds on) are more narrow and would not accept this hitch. I have included a link to a video showing an example installation for you.
The recommended ball mount for this hitch is # C45341. If the ball mount does not have the right rise or drop to tow the trailer level, use the link I have included that explains how to measure to choose a ball mount to tow the trailer level.
And for trailer wiring you can use # 118315 to install a 4-Way flat connector to the rear of the truck. I have linked a video showing an example installation of the wiring as well.
