will these work the same on a 2007 as well. or is there a better one.

The Draw-Tite Class III hitch you referenced, part # 75251 would work perfectly on a 2007 Dodge Dakota, it fits 2005-2011 Dakota trucks.

If you'll be using the hitch for towing, you might need the following items to complete your towing set-up.

Trailer wiring harness, part # 118323 (If trailer has more than 1 stop/turn/taillight per side, use a modulate like # C59236)
Ball mount, part # D-4
Hitch Pin and Clip, # PC3
1-7/8 trailer ball, part # 19260 or 2 inch trailer ball, part # 63845
Locking hitch pin, part # e98882
