can you use any tow bar with this baseplate?

The Roadmaster # 3122-1 XL Style Base Plate you mentioned is compatible with any of the Roadmaster Tow Bars, or to use a Blue Ox tow bar, a # RM-032 adapter would be needed. The Base Plate is compatible with a 2004-2009 GMC Canyon/Chevy Colorado, as long as it doesn't have the Xtreme package, as well as the 2010-2012 Canyon/Colorodo, with the exclusion of Xtreme and Z71 models.
You'd also need a tow bar, safety cables, a wiring harness so the taillights of the truck operate with the turn signals of the motorhome, a supplemental braking system and possibly a high/low adapter.
