We can't ever recommend you remove emissions related components on a vehicle. If you remove catalytic converters on a vehicle you will end up having Service Engine Soon codes pop on the dash of your vehicle.
But to answer your question directly, your vehicle will still run just fine without catalytic converters installed. Cats do not actually help the engine run in any way. All they do is clean up the emissions. The O2 sensors before the cats are what is used for the air/fuel mixture of the engine and the O2 sensors after the cats are there to make sure the cats are working properly. Removing the cats will cause these sensors to send a Service Engine Soon code.
