About a month ago I bought a role roof rack with extension for my 2004 Jeep Cherokee WJ. What is my best bet for a 2 kayak carrier to mount on the top?

For your 2004 Jeep Grand Cherokee and Rola roof rack you have a couple of options for carrying kayaks. First, you could use the Inno Kayak Carrier w/ Tie-Downs, # INA455. This carrier will hold the kayaks up on their sides. I have included a link to a video review of this carrier for you.
Another option is to use a J-style carrier, # S512, with extension # RRS512X which will allow you to carry 2 kayaks. This set up also carries the kayaks on their sides but instead of resting on the crossbars they will rest on the carrier. I have linked a video on the J-style carrier as well. With the kayaks loaded using any carrier there likely will not be much room for anything else.
Be sure to consult the vehicle owners manual or Jeep for the weight capacity of the roof prior to loading. One thing that makes loading/unloading easier and safer is a tire step, # ALL647596.
