On your 2004 Chevy Tahoe, you should find the wiring harness underneath the rear of the vehicle, above the spare tire. You may have to remove the spare tire to access the harness. The harness might not be long enough to reach where the the Pollak 7- and 4-Pole Trailer Connector Socket, # HM40975, will mount. If this is the case, you can use Replacement Multi-Tow 7-Way and 4-Way Trailer Connector, # 30955 instead.
You stated that your trailer has a 7 round plug. Check to see that the pins in it are the blade type as the Pollack unit is not compatible with round pins. If you do have round pins, you will need an adapter like the Adapter 7 Way (Blade) to 7 Way (Round Pin), # 47595. Your round pin 7-Way plugs into the front and the 7-Way blade on the back would plug into the Pollack unit.
