Question:
I have a 2002 Dodge Ram 2500 Quad Cab, 66inch bed. I have previously installed a signature series fifth wheel slider, but would like to use the under bed gooseneck. Is it possible to retrofit this adapter to my rails?

I have a solution for you, but the part # RP30158 that you referenced would not work with your Signature Series hitch that you have.
Instead you would want the Elite Gooseneck Adapter part # RP30845. This will fit in the rail system of your truck and will provide you with a gooseneck hitch. Check out the review video I attached for more info on this.
