For your 2007 Saab 9-3 with factory rails, I recommend the Evo Raised Rail Feet for Thule Crossbars - Factory Raised Rails - Qty 4 # TH710401 which is compatible with the bars you mentioned, that are often simply referred to as square bars even though they are rectangular by measurement. The brown wire for your trailer wiring should be for the running lights while the white wire should be for ground. Typically clearance lights use black for power and white for ground, like part # MCL32AB, but in the case of black and red wiring the black is typically ground while the red is for power.

But basically, some vehicles (like yours I believe) combine the stop and taillight functions onto one circuit.
These vehicles will require that you attach the trailer light power module red stop wire to that same circuit on the vehicle and then ground the brown tail light circuit.

We unfortunately do not offer a custom fit hitch for a 1999 SAAB 9-3. You would have to go with a weld-on hitch and figure out the correct drop to clear the rear fascia. I spoke with my contact at CURT and he pointed out to me that the difference between the CURT Hitch # 11415 and # 11326 is the way the plate behind the hitch opening mounts to the bumper beam tab. On the # 11415 the plate on the hitch will go in front of the bumper beam tab, whereas the plate from the # 11326 will install behind the bumper beam tab.

The Curt Echo Trailer Brake Controller # C51180 needs to have a 7-way blade connector on both the tow vehicle as well as the trailer.
The Custer Trailer Connector Adapter # ADP7R-7B that you found is designed to adapt a vehicle with a 7-way round pin connector to allow a trailer with a 7-way blade connection to be towed. It will not work properly with your trailer having a 7-way round pin male connector.

The attachment points on the vehicle that the hitches use are different between the 2007 Saab 9-3 SportCombi models. If you wanted to use the hitch for dual exhaust models on a single exhaust model it can require some modification on the vehicle and the hitch warranty will be voided and it is the same if you used the hitch for the single exhaust on the dual exhaust model.

Thule doesn't offer replacement parts for their fit kits like the part # THKIT3065 which is the correct kit to use on your 2008 Saab 9-3 with the bars # TH7601B-TH7602B.
The reason they give us is that they get the kits directly from Sweden pre-assembled so they can't split them up for replacement parts. So you'd have to order a new fit kit then.

I can explain how to install Hopkins trailer wiring harness # 46255 on your 2005 Saab 9-3. The trailer wiring harnesses for your Saab are all universal hardwire systems so while they do have instructions, they are not vehicle-specific instructions.

You would not have to jack up your 2007 Saab 9-3 to install Curt trailer hitch # C11326. But it will make it a whole lot easier if you did. I have included a link to the installation instructions and a video showing an example install for you.
If you want to use the hitch for an accessory such as a bike rack or cargo carrier then you have to make sure the accessory is rated for use with a Class I trailer hitch. Also, with a bike rack, you are limited to 2 bikes maximum on a Class I hitch.

The Draw-Tite Class II hitch you referenced, part # 36280 will fit your 2002 Saab 9-3 5-door hatchback unless it is a Viggen sub-model and unless it has the rear air dam. You should not need to trim anything, but the installation instructions specify that a 1/2 inch diameter hole needs to be drilled in the rear of the passenger-side frame member.
