What can I purchase and install to get us the max towing capacity from 2012 4 cyl Kia Sorrento? Looking into purchasing an airstream that weighs 2700lbs.

According to the owner's manual for your vehicle, the maximum towing capacity of the 2.4L 4 cylinder engine would be 1650 lbs. For the 3.5L 6 cylinder model, the maximum towing capacity is 3500 lbs if the trailer has brakes and the vehicle has a brake controller installed to operate them.
The Draw-Tite # 75684 hitch you referenced has plenty of capacity at 3500 lbs, but because the vehicle's tow capacity is much lower the lowest capacity should be followed. You'd be best served by using a vehicle with a higher towing capacity.
