Question:
I have a 2000 coleman mesa pop up camper. I want to do the conversion kit however I have open eye leaf springs instead of double eye. Do you have anything that will work with a dexter 3000 pound axle and open eye leaf springs?

By 'open eye', do you mean slipper springs? There's an eye at the front of the spring, but the other end of the spring is curved and fits in a clip welded to the underside of the trailer frame or rests on a tube or bolt on the spring hanger.
According to Dexter axle, it's unsafe to use the over/under conversion kit with slipper spring suspensions. It's intended for double eye suspensions only.
If you're wanting to raise the ride height of the camper, a combined approach of taller spring hangers and taller wheels/tires could gain you a modest increase in ride height. However, going with a 2 inch taller spring hanger won't necessarily grant a 2 inch ride height increase due to the springs flexing and the suspension articulating. Going with a larger diameter will provide half the wheel diameter increase. The fenders or wheel wells might limit the tire size as well.
