The Curt Trailer Hitch, part # C13065 is designed to fit your 2011 Jeep Grand Cherokee. This is a Class lll hitch and has a 2 inch receiver opening. I have attached a link to an installation video for this trailer hitch on a 2011 Grand Cherokee you can check out.
The hitch is rated with a maximum trailer weight of 5,000 lbs and a maximum tongue weight of 500 lbs. You will want to check your owner's manual or with your dealership to make sure you do not exceed the towing or tongue weight capacity for the Grand Cherokee.
Since you plan on doing some towing you might be interested in the etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag.
If you need trailer wiring and do not have the towing package on your Jeep I recommend the Curt Custom Fit Vehicle Wiring, part # C56009. You simply locate the connection points behind the tail lights and plug the harness into the existing wiring. There is no cutting or splicing into the vehicle wiring. This will give you a 4-way connector at the rear of your Jeep.
If you have a 7-way connector on the back of your Jeep and just need a 4-way connector I recommend part # C55384. This plugs into the vehicle wiring behind the rear bumper and gives you a 4-way connector as well as letting you retain the 7-way connector you already have.
When working with electrical connectors I recommend using dielectric grease like part # 11755. This keeps dirt and moisture out of the electrical connections and helps prevent corrosion.
