I see the high noon fc also comes 2 bike and separate add on. Can the 3 bike you sell be broken down to only two when the 3rd isn’t in use?

It sure can Eric! The RockyMounts HighNoon FC Bike Rack for 3 Bikes item # RKY74MR can indeed be broken down to a 2-bike carrier. It's a pretty simple process to get it removed and reinstalled too. There's two hex bolts on either side of the main tube/spline of the extension.
You'll want to make sure you hold onto the end cap. It'll be important when you take the extension off so you don't get water and debris inside the main tube of the RockyMounts item # RKY74MR.

I have a 2020 outback with oem hitch. A trek verve 2 low step. An Electra loft 7d step through. And a kids guardian bike large 20”. I want to be able to go on a road trip easily 600 + miles. I originally was looking at kuat transfer v2. Then nv 2.0. Then started thinking about the fender on the loft. Then I started looking at destination freedom and this high noon. I want something that is reliable and not going to fail after a couple years. Without execessive cost.
