How much extra wheel clearance can I gain by switching from a 4 leaf to a 5 leaf

Hi Brian; the # K71-384-00 you ordered will raise your trailer by the diameter of the leaf spring plus the height of the leaf spring stack. Leaf thickness on your typical leaf spring like the # e22YR is 3/8" so adding a leaf would get you another 3/8" of clearance.
