Would this be good for my 2023 Can Am Outlander 500? How many would I need? Im new to this, so any advice is appreciated!!

The Front Runner Stratchit Shorties part # FR59RV wasn't designed for securing a Can Am Outlander like you have. It was more designed for lighter weight cargo. For your application a stretching tie down like the ShockStrap part # 297-9RSDB would be a better choice. This has a capacity of 2,000 lb per strap instead.
