Question:
I have a 2021 Crosstrek with roof rails and a 2016 Pilot no roof rails yet but can get some. Are there crossbars that would work for both vehicles and easy to swap on and off? Thank you.

The simplest roof rack which you would be able to use on both your 2021 Subaru Crosstrek and 2016 Honda Pilot is going to be the SeaSucker Monkey Bars Roof Rack # SEA99FR. This is a universal roof rack using 60" long round bars and suction cups to mount to your roof.
If you prefer a mounted roof rack you should consider using the Rhino-Rack Vortex Aero roof rack for both vehicles. Each of your vehicles will need their own racks but it saves you from having to get rails for your Pilot as each vehicle requires different length bars. For your Pilot you will need the Crossbars # RRVA137B-2, Legs # RRRLKVA, and Fit Kit # DK444. Your Crosstrek will use the Crossbars # RRVA118B-2 and Legs # RRSX100. Since both vehicles are using the same type of crossbars this will allow you to easily switch accessories between different vehicles.
