Can you help me find the hub setting?

Sure can! You'll want to set the hub to 3 when installing the Yakima FullBack 3 Bike Rack # Y02633 on your 2021 Tesla Model 3. You'll also want to adjust the bike rack so that the base pad is 1" above the bumper for proper fitment.

The top hooks will need to be installed in anchor mode as well. You can see how this is installed in the instructions or by looking at the attached video I shot on a 2020 Audi Q7. If you jump to the 3:24 minute mar of the video you'll see me explain how to change the hooks to the anchor mode.
