I have a step side bed with only two bolts holding the tailgate handle in place, will this pop and lock system still work with my truck Thanks

The Pop and Lock Powered Tailgate Lock for the 2005 GMC Sierra, part # PAL8110, is intended to fit all models of the 1999 through 2007 GMC Sierra/Sierra Classic. I reviewed the installation instructions and there is no mention of any exception for step-side-bed models of your truck. In a separate email I have forwarded those written installation instructions to you. My contact at Pop and Lock confirmed this part is a fit for your vehicle.
A video for this product showing installation in your year/make/model truck is provided via the included link. This video illustrates both the mechanical and electrical installation steps. As you noted, the 2005 Sierra shown in the video has three bolts holding the tailgate handle in place (while your truck has two bolts holding this assembly in position in the tailgate).
If you review the video from approximately the 1:10 point, you will note that mounting of the stock tailgate handle on the Pop and Lock mechanism uses only two of those three bolts. I have provided a photo that shows the portion of the Pop and Lock mechanism where the stock handle mounts; an arrow indicates the two holes used in your application. (Since this part fits more than one year/make/model vehicle, Pop and Lock provides multiple sets of mounting holes on its bracket.) These holes are spaced 2-7/8 inches apart, center to center. If the two holes on your tailgate have this same center-to-center spacing then there should be no issue with the installation.
