Would you be able to use this with the Camco 21 gallon sewage tote, the tote is a little long but well within the weight?

As long as you secured the Tote-N-Stor securely on the Bunk Adapter part # CC-255 yes you could do what you are looking to do. There's no reason it couldn't be stored on the bunk.
