Could this be bolted to 2inch X 2inch box steel which I could then bolt to this rear over-doors shelf on our van? What is the folded up length of the awning?

I suppose with some fabrication and ingenuity you could install the Rhino-Rack Batwing Compact Awning - Roof Rack Mount - Bolt On - Driver's Side - 69 Sq Ft # RR33300 in this manner, but it's not going to be something that you'd be able to accomplish out of the box. The # RR33300 is 76" long.
There is also the Thule HideAway Awning - Wall Mount - Waterproof - 80 sq ft # TH490011 which is 8 feet wide and is designed to be mounted directly to the wall of a camper van, but it might be a bit too wide for the rear of your van, so you'll want to measure how much space you have.
