I see there are a few variations of the engine oil cooler, which would be the best for a 2017 Dodge Ram 1500 Crew Cab 3.6L V6. Thanks.

I would go with a class II cooler like the Derale Dyno-Cool Tube-Fin # D15502 cooler. This can be used with the 5.7L HEMI as well so it will be plenty of cooling power for your 2017 Dodge Ram with the 3.6L.
