I have a 2015 ford fiesta SE hatchback. I have a 60 pound electric bike with fat tires that i want to take with me. What type of hitch and bike rack should i get.

With a hitch installed like the Curt part # C11067 that fits your 2015 Ford Fiesta you'd need to use an E-bike rack like the EasyFold XT part # TH903202 with the fat tire adapters # TH985101.
Most e-bike racks can't be used in the 1-1/4 inch hitch size but the EasyFold XT was designed to and due to it having a ramp that pulls out from the rack it is also very easy to load/unload.
