We have a Ford F350 Super Duty Crew Cab SRW Cab and Chassis with the fuel tank in the rear will this hitch # C15445 fit this truck?

The CURT Trailer Hitch Receiver # C15445 that you referenced should work well for your 2000 Ford F-350 with a single rear wheel axle as this hitch is confirmed to fit all models of the 2000 Ford F350 cab and chassis.
As long as the fuel tank is in the factory location it should not prove to be a problem either.
