Which of the SumoSprings should I get for my 2020 Ford F-250? I see there's two kits with different capacities?

For your 2020 Ford F-250 Super Duty there are two SumoSprings options that fit your truck like you mentioned. There's the 2,800 lb kit part # SSR-114-54 and the 1,500 lb kit part # SSR-114-54.
Basically you want to go with the lightest duty kit that will work for your application so that you get the support you need without causing your ride quality to be overly harsh. Going heavier than you need will give you a harsher ride quality than you'll want loaded and unloaded. You didn't mention the pin or tongue weight of your trailer, but unless you are at the max capacity for your truck I would recommend going with the lighter duty.
