I recommend Curt Class III hitch part # C13182 for the 2020 Jeep Grand Cherokee SRT-8 because it has a higher towing capacity compared to the other hitch options available. It has a 6,000 lb gross towing weight but you do want to check your owner's manual to make sure you do not exceed the towing capacity of the SRT-8. I have attached an installation video for your reference.

For the wiring, I recommend 7- and 4-Pole Trailer Connector Socket w/ Mounting Bracket - Vehicle End part # HM40975 which will plug right into the factory tow package harness. It is the easiest installation compared to the other 7-Way options available. I have attached an installation video for your reference.

Since you plan on doing some towing, you may consider the etrailer ball mount kit # 989900. It comes with 2 ball mounts; one with a 3/4 inch rise or 2 inch drop and one with a 2-3/4 inch rise or 4 inch drop. It also includes a 1-7/8 inch ball, 2 inch ball, hitch pin with clip, and a storage bag. If you are not sure how much rise/drop you may need in a ball mount to tow your trailer level, I recommend to take a look at the helpful article I have attached about how to figure the amount of rise or drop you may need.
