Looking for an all-weather floor mat for my 2018 Ford Transit LWB 15 Passenger. I suppose I could buy the cargo van 1-piece and modify as needed.

The best solution for your 2018 Ford Transit LWB that is a 15 passenger van will be the VanTred part # VTFT15L you mentioned and then trimming the mat as needed to fit around the bases of the chairs. This is thermoplastic over foam so it would be a great weatherproof and/or kid-proof option.
