I want to add a 40 amp accessory plug to my 2019 Honda Odyssey to run a 400 watt inverter. I plan on using 20 or 12 gauge wire.

A 12V circuit rated for 40-amps typically needs heavier wire, usually 10-gauge, such as what we include in our 7-way kit # ETBC7. This kit has all the parts needed to upgrade 4-pole flat trailer wiring like # 118521 (the item you referenced) to the 7-way format that includes the auxiliary 12V power circuit for things like operating a powered trailer tongue jack like # EJ-3520-BBX.
We do offer a 12V Outlet Kit # RM-9332, if that is the type of connector you need, but please note that this item is rated for 20-amps maximum. This is the connector type used with a 400-watt inverter like Go Power # 34280174 which is shown in the linked video.
