is the led bulb really bright or can a brighter bulb work.

The Gustafson RV LED Pendant Light # 277-000461 referenced in your question features a 4 inch LED puck as its light source. It does provide a great beam spread with 300 lumens which will be plenty bright enough for use over a kitchen counter, table, or other similar application.
This is considered a hard-wired light so the bulb cannot be replaced.
