Is there a recommended ground clearnace with this hitch on a 2017 MKC? Ford Escape

The distance from the ground to the top of the inside edge of the receiver tube on the Draw-Tite Max-Frame Trailer Hitch Receiver part # 75943 while installed on a 2016 Lincoln MKC is 13". Therefore, you should not have any scraping issues with this hitch for the exception of very steep slopes/inclines.
