For your 2003 Honda CR-V, I recommend the Draw-Tite Max-Frame Trailer Hitch Receiver # 75690. This is a 2 inch receiver that will allow you to us a ball mount like # C45900 to give you the adjustable height to tow your boat trailer level. This hitch does not require any additional security straps like the Curt # 18050 for popular accessories like a bike rack or cargo carrier.
For your wiring, I recommend the T-One Vehicle Wiring Harness with 4-Pole Flat Trailer Connector # 118336 which will simply plug into your factory wiring behind the trim panel on your driver's side in the cargo area. I've attached videos to assist.
