We do have pictures of the Curt Class III Hitch installed on a 2010 Ford Escape, check out the Curt Trailer Hitch Receiver, part # 13650.
The Curt round hitches do not stick out too far from the vehicle and for the most part are hidden. The round-tube design allows the hitch to sit closer to the vehicle fascia.
I would recommend going with the Class III 2 inch hitch, part # 13650, as it is the highest rated hitch available for your 2011 Ford Escape. Also, 2 inch hitches are compatible with a wider range of hitch accessories and bike racks. The round-tube hitch will also be less visible on your Escape.
I have linked instructions and video of the Curt Trailer Hitch Receiver, part # 13650, being installed on a 2010 Ford Escape.
