Are you able to adjust the angle of the bunks so that they match up to the angle of the boats hull?

Yes, you can change the angle of the bunks in the CE Smith Bunk-Style Guide-Ons # CE27660. The brackets that hold the bunk boards are bolted to the tops of the posts so once the angle needed is set you would tighten those bolts to keep that angle.
