will I have to lower my exhaust with this hitch and do I have to cut any of my bumper away

You will not have to lower the exhaust or perform any trimming when installing the Draw-Tite Trailer Hitch, # 75684, on your 2011 Kia Sorento. I have included a link to the instructions below. There is a drawing in the upper left corner that shows the hitches position after it is installed.

I have seen a lot of hitch installation instructions and I have to say, these are among the simplest I have come across. There is no drilling, trimming, lowering, or cutting mentioned at all. You simply bolt it in place. We have given it a difficulty rating of 3 out 10, which is pretty easy. With that said, I recommend having a helper to hold the hitch up while bolting it into place.
