Question:
I have an Atlas VW 2019. I want to be able to carry 3 kayaks on top. Two of them are 12foot and one is 10. I have raised side bars. I know I need crossbars not sure which and some kind of holder/stabilizer.

Your 2019 Volkswagen Atlas first needs a crossbars setup. I recommend installing the Malone AirFlow2 Roof Rack - Aero Crossbars 58" # MPG216 which will attach to your factory raised rails and provide plenty of usable space for 3 kayaks.
Then I would add the Rhino-Rack Nautic Stack Kayak Carrier w/ Tie-Downs 4 Kayaks # RRS520. This comes with enough tie-downs for two kayaks, so for your third kayak you will want to add more tie-downs; Rhino-Rack Cam-Buckle Cinch Strap and Anchor Kit # RRRBAS-RTD55P-RTD45P would work well. I attached demonstration videos for you.
